Naturally leavened · Baked to order

Slow bread, proofed overnight, baked with love.

Hi, I'm Rinny, and this is my kitchen.

Rinny's Rustic Rise started with a jar of flour, water and a lot of patience. What began as weekend loaves for family turned into a starter I feed every morning and a kitchen that smells like toasted crust most days of the week.

Every bake uses real sourdough fermentation, with no commercial yeast and no shortcuts. Dough rests up to two days in the fridge to build flavor, then goes into a screaming-hot oven for that crackly, blistered crust. I bake in small batches, so everything you get was made that week, by hand, for you.

Hand-mixed dough, stretched and folded over several hours.

Day 2–3

Cold ferment

A long rest in the fridge builds tang and a tender crumb.
